An 18-metre conveyor belt snakes through the space, carrying a constantly changing parade of British artisan cheeses straight to the table. Set against exposed brick, marble counters, and warm industrial lighting, the room hums with motion: plates gliding past, glasses clinking, curiosity deciding what to grab next. part tasting room, part experiment.
