Solander Dining and Bar is named after first fleet botanist Daniel Solander, and is a relaxed and sophisticated dining and bar experience located on the first floor of West Hotel. Solander Dining offers modern Australian fare, with a food philosophy that embraces and supports the very best regional and seasonal produce from sustainable sources that New South Wales has to offer.

In the morning, the bar opens early, making it the perfect spot to order fresh pastry and coffee, supplied by Will & Co. Solander Dining is open for breakfast, lunch and dinner daily, from 6.30 am until late daily.
