We opened La Chouette because we missed the food we grew up with in Burgundy. People sometimes expect a big show, but that’s not really what we do here. The place is small. What we want most is that people feel comfortable eating here, like they’ve stepped into a little pocket of France without us having to explain it. Some nights it gets loud, some nights it’s quiet, depends who’s in. That’s how we like it.
