Our ingredients are selected in accordance with the season. We go to extraordinary lengths to source them from provedores based in lesser-known Italian regions like Sardinia, Puglia, Calabria and Siciliy. We then give them space to shine, creating share dishes that showcase, rather than obscure, their superiority.
